Chicken Tostadas

This is a quick and easy favorite at our house. Here is what you will need:

Small Tortillas (Flour or Corn)
Shredded Chicken (I usually cook a bunch at once and shred it or cube it and freeze it to use throughout the week)
Salsa Verde
Cilantro
Cumin
Cheese
Lettuce
Fresh Pico De Gallo (or Salsa)
Sour Cream
Avocado

Set the oven to broil. Mix chicken with some green salsa, fresh chopped cilantro, a little bit of cumin and salt and pepper to taste. Place tortillas on a baking sheet. Top each one with some of the chicken mixture and some shredded cheese. Put it in the oven and cook until the cheese is bubbly and the tortilla looks crispy. Watch it cafefully so it doesn't burn. Top with lettuce, pico de gallo, sour cream and avocado.

Note: I love fresh Pico De Gallo, so I usually make up a quick batch with fresh tomatoes, onions, cilantro, garlic, lime juice, salt & pepper.
